It is Halloween!!

First .... a little treat :)

This guy has a lot of amazing light shows for Halloween up on youtube... you can find him under the name: KJ92508 ....  he has been doing this for several years now.

So ....  I have been neglecting this blog because I have had to keep on THIS BLOG for my multimedia class.   I have found a lot of fun interesting things for that blog  :)

Anyway - I wanted to post Halloweenie Pictures of the kids!!

We had a fun night!!  Noah gets rather crabby - I think because his legs start to really hurt from all the walking. 

By the end of the night, our bucket of candy was half empty when we got home and over flowing when I added the trick or treat candy!

RECIPE: Bacon Wrapped Lime-Chipotle Chicken Stuffed Jalapeno Poppers

I cannot emphasize how AMAZING these are...   I was searching the web for some new recipes one day and happened across this one.... it's from The Wicked Noodle ...  all credit goes there :)  I'm just sharing ...

When starting out the recipe, you put oil, chipotle peppers in adobo sauce, lime juice, honey and garlic in a blender and and it is originally all separated like this ... lol..

Then you marinate the chicken in it.
 You roast the jalapeno peppers in the oven
 This is the cream cheese & cilantro mix  (Chef Dennis added a little honey to this mix and a couple habanero peppers chopped finely... he said the honey made it a little slicker to deal with then usual though.)
 Here are the jalapeno's cut in half...

 then we wrapped the marinated chicken around the pepper and then the bacon around the chicken...

I can eat a ton of these and it doesn't raise my blood sugar much!!  YAY!

Here is the recipe:

Bacon-Wrapped Chicken Stuffed with Jalapeno Poppers Recipe

  • 1 – 1 1/2 pound package of boneless, skinless chicken breast
  • 1 cup Saucy Mama’s Lime-Chipotle Marinade – or see marinade recipe below
  • 6 – 8 jalapenos
  • 4 oz. cream cheese, softened
  • 1/4 cup chopped cilantro
  • 6 – 8 slices bacon, sliced in half crosswise
Marinade:
  • 3-4 chipotle peppers in adobo sauce
  • the juice of two limes
  • 2 garlic cloves, chopped
  • 3 tbsp Honey
  • 3/4 cup Vegetable oil
Puree all ingredients – that’s it :-)


Preheat oven to 375 F.

Place a chicken breast between two heavy-duty sheets of plastic wrap and pound to 1/8 inch thick. Place chicken in a resealable plastic bag with Saucy Mama’s Lime Chipotle Marinade; marinate for thirty minutes.

Meanwhile, roast jalapenos for ten minutes. Remove from oven, and when cool enough to handle, slice in half lengthwise and remove seeds. Combine cream cheese and cilantro; fill jalapeno halves with cream cheese mixture.

Slice chicken crosswise into pieces the same size as your jalapenos (or slightly smaller, as in photo above). Wrap jalapenos with chicken, seam side down. Wrap bacon around chicken, seam side on top, then spear with a toothpick to hold it all together. Place on a baking sheet.

Bake for 15 – 20 minutes, or until chicken is cooked through. Turn on the broiler the last few minutes to crisp the bacon, if desired. Remove from oven and remove toothpicks. Serve and enjoy! :-)

Recipe: Cheeseburger Pie

So as a family of six we really like easy recipes that don't cost a lot to make and are really tasty.  Especially if the little kids will eat it without a problem.  One of the things we make that fits all this is a Cheeseburger Pie recipe.  Now, it's a Betty Crocker recipe that can be found  HERE.   But I'll post the recipe here, just wanted to give credit where credit is due.  But it has a lot prettier picture ....  I have to say.

So ...  first off, this time when we made it ....  we added some jalapeno peppers in with the onions,and then sweated them... 
And Chef Dennis added beef stock to make it a little tastier ... he just reduced it and added it...

IMPOSSIBLY EASY CHEESEBURGER PIE RECIPE

This recipe has been on the Bisquick® mix box for years, and it is still one of the most-requested Impossibly Easy Pie recipes.

Ingredients:
1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2  cup Original Bisquick® mix
1 cup milk
2 eggs

STEP 1:  Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
STEP 2:  In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
STEP 3:  In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
STEP 4:  Bake about 25 minutes or until knife inserted in center comes out clean.

Expert Tips
Top off a slice of this delicious pie just like you would a cheeseburger. Some favorites are barbecue sauce, bacon, ketchup, salsa and sliced tomato. Or go wild with pineapple slices or avocado!

Podcasting ....

So ... for my multimedia class....  we have to keep a blog....

..... I KNOW RIGHT ........ 

This is going to be SO hard for me.  I obviously HATE blogging!  So we put all of our assignments on our blog site ...  off Weebly.  Never been to Weebly?  Check it out, it's kinda cool!!   Anyway - here is my site if anyone wants to check it out.....  MAMMARAZZI ...

So ... one of the things we have to do for class are PODCASTS .... never heard of them?  I'm sure you have - you just may not have realized they are called PODCASTS ....  you can find a TON of them on iTunes, about just about anything.  Do you ever listen to your favorite morning show radio DJ later in the day?  Yeah, that's a podcast ... 

So we had to do a test one .... which I did a knock-knock joke with Noah.  A classic one ...  Orange you glad....  

So I had to do a second one ...... and .... well....   I decided to go with one of my favorite blogs.  So you can listen to me reading all about BATHROOM WOES .... 

Yep....... I did it.  Hated every minute of it.  I can honestly say, I think I'll stick with old fashion WRITING ...

College = Eat, Sleep & Pee Homework....

Homework........ 


It seems to be the only thing that I can do in my free time right now.. oh wait, I have no free time because I'm to busy doing homework! ....

I had 2 presentations so far, only had 3 weeks of school!   The first presentation was in my multimedia class ...  our group had to find websites and compare then from font to video to downloads .... to color schemes.. to a lot of things.  I have no idea how I did in this presentation.  We had a missing group member (who was suppose to do the group  part of the presentation.) ...  our group had to pull everything together last minute.  Then I had my 2nd one yesterday in my college success class.   The class was split up into groups to cover a chapter in the book and teach the class about it.  I think I did pretty good on that one.  Don't know my grade on that one either though.   Ugh....   I hate not knowing my grade!

I know that I'm pulling an A in my English right now ...  ::crossing my fingers::: that this continues as things get harder.  So far so good though.  I'm pretty sure I'm pulling an A in my College Success class too.  I think I'm pulling one in my Multimedia too..... but .... I ... don't.... know.... for .... sure.... and I HATE it. 

So I need to talk with my Adviser - and I emailed him, and he emails me back.  Apparently the certificate I'm going after right now is in it's last year - so I have to get those classes in first ... so I need to meet with him on Tuesday.   (No school on Monday!)

It's October......


It is my favorite month out of the whole year!!  I have always wished I had a Halloween birthday; however, I don't.  It just didn't work out that way for me.  But, it's still my favorite month of the year.   Why?  Because the weather cools down and the leaves are changing, and Halloween is at the end of the month.  Even though I'm highly allergic, I love seeing all the pumpkins around, the hay rides, the corn mazes, the pumpkin patches.  It reminds me of going out to the pumpkin patches and picking out pumpkins, having caramel apples.... another thing I'm allergic to.  You would think, with all the allergies and things I can't have/can't do .... that it would be one of my least favorite months, but it remains my favorite for sure.   

I'm looking forward to taking the kids to a corn maze and/or pumpkin patch this year.  Can't wait!  We're putting up Halloween decorations..... and the kids are talking about what they want to be for Halloween. 

Halloween is my all-time favorite holiday, Christmas is a close second!  So I'm very excited to welcome October  ....  because, lets face it....  October ROCKS!
